Celebrations “Kuch Meetha Ho Jaaye” ….Malai Ladoo

Ingredients of Malai Ladoo

500 gm paneer

200 gm milkmaid

10 Cardamom powder

2-3 drops kewra essence

Method of Preparation of Malai Ladoo

Mesh the paneer very well.

Add milkmaid

Cook on low flame, and stirring continously.

Cook till thick and starts leaving sides.

Add essence and remove from flame.

Add Cardamom powder and mix well

Pour on plate.

When it gets lukewarm, make ladoo from mixture.

Malai Ladoo is ready to be served.

Note

You may also use Vanilla essence or rose water drops, if you don’t get kevra essence available in nearby market.

You can keep ladoo in fridge.

DAL TADKA/ TOOR DAL

TOOR DAL TADKA

Ingredients of Dal Tadka / Toor Dal

 

Toor Dal (arhar /lentils)                              : 1 cup

Onion                                                     : 2 medium sizes

Tomatoes                                             : 2 medium sizes

Kari Patta                                            : 3-4 leaves

Ghee                                                     : 5 teaspoon

Mustard Seeds                                     : ½ teaspoon

Garam Masala                                     : 1/4 teaspoon

Coriander Powder                               : 2 teaspoon

Red Chili Powder                               : ½ teaspoon

Turmeric Powder                                : ½ teaspoon

Lemon Juice                                        : 1 teaspoon

Salt                                                      : to taste

 

TOOR DAL TADKA

Method of Preparation of Dal Tadka / Toor Dal

 

Clean and wash Dal thoroughly.

Add 4 cup water, salt, and turmeric powder to Dal in pressure cooker.

Boil Dal in pressure cooker until two whistles.

Now Prepare Tadka in a separate pan.

Add ghee in a heated pan on low flame.

Once ghee is hot, add mustard seeds, kari patte and leave for 1 minute

Add chopped onion to ghee and sauté until onion turn light yellow.

Now add chopped tomato to Pan and sauté until tomato is fried ( it may take 5 minutes).

Add coriander powder, red chili powder and sauté for 1 minute.

Now add boiled dal to tadka and leave for 2 minutes.

Now add garam masaal powder and leave for 2 minutes.

Turn off the flame and add lemon juice to dal.

Now dal tadka is ready to be served with chapatti, paratha, rice.

NOTE:

For a variation, you can use pinch asafetida (hing), ½ teaspoon cumin seeds and 1 tej patta (bay leaf) in place of mustard seeds and curry leaves

MATAR KULCHA /CHOLE KULCHA

 

Ingredients of Matar Kulcha /Chole Kulcha

 

Yellow/white dry peas (matar)                               : 1 cup

Onion                                                              : 2 medium sizes

Tomatoes                                                         : 2 medium sizes

Coriander leaves                                             :  for garnishing

Green chili                                                       : 4 medium sizes

Grated ginger                                                  : ½ teaspoon

Refined oil                                                       : 3 teaspoon

Cumin seeds                                                    : ½ teaspoon

Chat masala                                                     :1 teaspoon

Garam Masala                                                 : 1/4 teaspoon

Coriander Powder                                           : 2 teaspoon

Red Chili Powder                                           : ½ teaspoon

Turmeric Powder                                            : ½ teaspoon

Lemon Juice                                                    : 1 teaspoon

Salt                                                                  : to taste

Super seasoning                                              : 1 pinch

MATAR KULCHA

Method of Preparation of Matar Kulcha /Chole Kulcha

 

Overnight Soak dry peas in water.

Dry out all the water

Now add fresh 1.5 cup water, super seasoning, slat and boil to two whistles in pressure cooker.

Now prepare tadka in fry pan

Heat the oil and cumin seeds.

Add tomato, green chili, ginger and cook for 2 minute

Add all the spices to fry pan.

Now add boiled peas and cook for 5 minutes. Turn off the flame

Add lemon juice and chopped onion.

Garnish it with coriander leaves.

Now matar is ready to be served with Kulcha.

You can buy readymade Kulcha from market.

You may heat them with or without butter.

 

Now hot matar kulcha is ready to serve. It is very easy to cook.

ROTI POHA / BREAD POHA

ROTI POHA

 

Ingredients of Roti Poha / Bread Poha

 

Roti                             : 4

Onion                          : 1 chopped

Tomato                        : 1 chopped

Green Chilies              : 2 chopped

Sugar                           : 1 teaspoon

Curry leaves                : 5

Mustard Oil                 : 1 cup

Refined Oil                 : 4 teaspoon

Red Chili Powder       : ½ teaspoon

Turmeric Powder       : 1/2 teaspoon

Black mustard Seeds  : ½ teaspoon

Cumin seeds               : ½ teaspoon

Salt                            : to taste

ROTI POHA..a quick sancks

Method of Preparation of Roti Poha / Bread Poha

 

Mesh roti in very small pieces like Poha..

Heat the pan and add refined oil to it.

Add mustard seeds, cumin seeds, curry leaves to heated oil and leave for 30 seconds. Add chopped onion to pan and fry until it turns light yellow.

Add tomato to pan and fry for 3 minutes.

Add chopped green chili, all the spices, sugar and meshed roti and mix it well.

Sauté it for 2 minutes until all the ingredients are mixed properly

Now hot roti poha is ready to be served. You may also add tomato sauce to it.

Note:

For bread poha you may use meshed bread in place to roti.

Bread Pakoda

Bread Pakoda

Ingredients:

Gram Flour                                          : 100gm,

Soda                                                    : 1 pinch

Onion                                                 : 2 medium sizes

Bread                                                  : 8 slices

Salt                                                      : to taste

Garam Masala                                   : ½ teaspoon

Dried Mango powder                     : 1/4 teaspoon

Coriander Leaves                             : 2 teaspoon

Oil                                                         : for frying

Boiled potoato                                    : 3 medium sizes

Red Chili powder                               : 1/2 teaspoon

Green chili                                           : 3 medium sizes

Bread Pakoda

Method of Preparation of Bread Pakoda:

Peel off boiled potatoes.

Mesh boiled potatoes once they are cold.

Chop onion, coriander leaves, green chili

Add half chopped onions, half coriander leaves, half chopped green chili, garam masala powder, red chili powder, Dried Mango powder, salt to mashed potatoes to make the filling.

You may sauté prepared potato filling on low flame for 2-3 minutes.

Now you may divide bread slices in two or four pieces as per your wish. Keep them aside.

To make batter. Add approximate half cup of water, pinch salt, red chili powder, coriander, leaves, and chopped onion to gram flour. It should be as thick as to be wrapped on bread slices.

Now fill the potato filling between two bread slices and wrap gram flour batter on filled bread slices for coating.

Now deep fry filled bread slices in hot oil until it turns light brown.

Now bread pakoda is ready to be served with sweet and sour sauce.

To make bread pakoda without potato filling just remove the potato filling part and all other ingredients and process will remain same.

Now hot bread pokoda is ready to be served with sweet and sour sauce.
